Quinoa with Mint, Cilantro and Red Onion

This dish essentially serves up a mix of grain with fresh, zesty herbs. Inspired by tabbouleh, it substitutes clearing mint for parsley and light, protein-rich quinoa for wheat. Ingredients:

  • 64 g Cilantro
  • 1/3 cup Olive Oil
  • 2 tbsp Mint
  • 1/4 cup Red Onion (raw)
  • 2 whole Limes
  • 1 tsp Salt 
  • 1 cup Quinoa 
  • 1/4 tsp Black Pepper 

Instructions: 

  • Boil quinoa in 2 cups of water for 15 minutes or until soft. 
  • Do not overstir or overcook to avoid quinoa turning to mush. 
  • Finely chop mint and onions. Gently mix all ingredients together. 
  • Serve immediately or chill in the refrigerator for 2 hours before serving.
