Quinoa with Mint, Cilantro and Red Onion
This dish essentially serves up a mix of grain with fresh, zesty herbs. Inspired by tabbouleh, it substitutes clearing mint for parsley and light, protein-rich quinoa for wheat. Ingredients:
- 64 g Cilantro
- 1/3 cup Olive Oil
- 2 tbsp Mint
- 1/4 cup Red Onion (raw)
- 2 whole Limes
- 1 tsp Salt
- 1 cup Quinoa
- 1/4 tsp Black Pepper
Instructions:
- Boil quinoa in 2 cups of water for 15 minutes or until soft.
- Do not overstir or overcook to avoid quinoa turning to mush.
- Finely chop mint and onions. Gently mix all ingredients together.
- Serve immediately or chill in the refrigerator for 2 hours before serving.
